At VMT we are excited to provide our guests with meals crafted from the most sustainable and local sources possible. We believe that feeding our bodies organic, regenerative, local food is an act of love for ourselves, our community and our planet. 


The VMT Winter Food Experience

A Day of Dining in Winter

  • Breakfast: Start your day with a wholesome breakfast featuring farm-fresh eggs, artisanal bread, and seasonal preserves. Our coffee comes from the famous Oso Negro in Nelson, and our selection of tea and herbal drinks is thoughtfully curated

  • Lunch: Everyday, we prepare a different and creative sandwich or wrap for you; the only thing left for you to decide is which treat to pick—will it be one of our cookies, brownies, Nanaimo bars or energy balls ?

  • Après-Ski: The culinary rewards awaiting you are varied, ranging from a charcuterie board, a cheese platter, seasonal soup or nachos.

  • Dinner: Each evening, our chefs prepare a multi-course dinner highlighting the best of local ingredients. Expect bold flavours, creative presentations, and a touch of mountain-inspired magic.

Commitment to Sustainability

Over the past two years, we’ve worked diligently to build relationships with local farms and food suppliers. This commitment has allowed us to craft menus that are not only delicious but also sustainable. We’ve even created a specialized role within our operation to ensure that our food sourcing remains local and regenerative. Winter vegetable storage has become an integral part of our mission, allowing us to bring farm-fresh ingredients to your plate even in the snowiest months.

    Kootenay Corner Gardens is run by Josh ( chef at VMT ) and Thalia, who are dedicated to sustainable, small-scale farming in Crescent Valley, BC, where they grow organic vegetables, herbs, and flowers with a focus on soil health, biodiversity, and providing fresh, local produce to their community.

  • Ravine Creek

    Operated by Nigel and Laura in the Slocan Valley, BC, is a certified organic farm specializing in diverse, high-quality vegetables grown with a focus on sustainability, soil health, and community connection.

  • Crooked Horn

    Ange and Gord, former city dwellers turned passionate farmers, established Crooked Horn Farm in 2009 in the Slocan Valley, where they grow certified organic, veganic produce using innovative, sustainable methods that nurture the soil, protect local ecosystems, and reflect their commitment to an environmentally friendly, plant-based lifestyle.

  • Spicers farm

    Is a certified organic operation in Nakusp since 1948, is a regional staple, producing essential vegetables while prioritizing sustainable farming, local biodiversity, and the protection of critical farmland in BC.

  • Fairway 4 Farm

    Established in 2016 on the unceded territory of the Sinixt Peoples, is a small-scale, regenerative farm in the Slocan Valley that produces organic vegetables, herbs, plant starts, free-range livestock, and Icelandic sheep fleece, combining sustainable agriculture with Tim's 30 years of organic farming expertise and Jen's artistry in jewelry and fabric arts.

  • Kootenay Meadows Dairy:

    It’s a family-owned, certified organic dairy farm in Creston, BC, producing high-quality milk, cheese, and yogurt with a commitment to sustainable farming practices, animal welfare, and delivering fresh, delicious products to the local community.

  • Two Rivers

    Two Rivers Specialty Meats, based in North Vancouver, BC, partners with local farms to provide ethically and sustainably raised meats, specializing in hormone- and antibiotic-free products while promoting nose-to-tail butchery and offering premium cuts, charcuterie, and smoked goods.

  • Chez Totoche

    Located in Nelson, BC, specializes in handcrafted charcuterie made with locally sourced, ethically raised meats, offering a range of artisanal products that highlight traditional methods and a passion for exceptional flavor.
